Cooking With Mint

Herbally infuse the flavor of Summer into your meals!



Summer is finally here and more and more, we're trading in soups and stews for lighter fare. Fresh fruits for breakfast, salads for lunch, and maybe we'll through something on the grill for dinner. Nothing brings the refreshing taste of summer out in a dish quite like mint does. This is surprising, because of the herbs' popularity during the winter months as well.


This versatile herb can be added to pasta salads, pestos, salsas, marinades, and dressings. The possibilities are endless! So, this week we have a recipe for a simple salad dressing that is just as adaptable as the mint leaf.




Ingredients:

  • 1/4 Cup of extra virgin olive oil

  • 1 tbsp of fresh lemon juice

  • 1/2 tsp of mint

  • 1/8 tsp of minced garlic

  • 1/8 tsp of onion powder

  • salt and pepper to taste


Directions:

  1. Whisk all ingredients together (preferably within a spouted container for an easy pour.)

  2. Once all of your ingredients are well combined, refrigerate until ready to pour over your favorite salad.

Note: This dressing also works great as a marinade for chicken, or a tasty dipping sauce for artichokes.
