Baking with Mighty Mushroom

Indulge in this delicious banana and mighty mushroom bread recipe!

We're back in the kitchen this week, putting a mighty spin on an old classic. Adding our Mighty Mushroom and herbal tea blend powder to this simple banana bread recipe marries great flavor with unique nutritional benefits.

Mighty Mushroom

This Herbal mixture blends chicory root powder, cinnamon, chaga, and lion's mane mushrooms. This blend offers a unique alternative to coffee, or may be added to your morning cup of Joe for an extra boost!

Chaga Benefits

In addition to improving immunity and regulating cholesterol levels, Chaga may also be able to help in the fight to stave off cancer. Other health benefits may include; Reducing inflammation, correcting blood sugar levels, and acting as an Alzheimer's deterrent. Studies are still ongoing to determine the benefits, as well as to pinpoint things like dosage and side effects.

Mighty Mushroom Banana Bread

PREP TIME: 10 mins COOK TIME: 60 mins TOTAL TIME: 70 mins SERVINGS: 8 to 10 servings YIELD: 1 loaf

  • 4 over-ripe bananas

  • 1 tbsp of our Mighty Mushroom blend

  • 1/3 cup of melted butter

  • 1 tsp of baking soda

  • A pinch of salt

  • 3/4 cup of sugar

  • 1 egg

  • 1 tsp of vanilla extract

  • 1 1/2 cup of flour


  1. Preheat oven to 350°F (175°C), and butter your loaf pan. *An 8 x 4-inch loaf pan works best for this recipe.

  2. In a mixing bowl, mash bananas and melted butter with a fork until you achieve a smooth texture.

  3. Mix in all remaining ingredients.

  4. Pour your batter into the buttered loaf pan and bake for 55 to 65 minutes at 350°F (175°C.)

  5. Once you've removed the loaf from the oven let it cool, uncovered, for 20 to 30 minutes. And enjoy!
